This Cauliflower Soup is one of the best recipes to make with fresh cauliflower! It’s rich and creamy, brimming with veggies and it has the perfect balance of flavors (bring on the cheddar and bacon!). It’s just one of those comforting recipes you’ll want to make time and time again.
Delicious Cauliflower Soup Recipe
This soup is actually very similar to a potato soup. Before telling my kids what kind of soup it was, my daughter was eating it and asked if there were potatoes in it, so it must be close.
I love how the flavor of this soup is simple yet so satisfying. Nothing fancy here just creamy, cheesy homestyle soup!
Creamy Cauliflower Soup without Cream
I love that this soup is nice and creamy but doesn’t have any heavy cream. For best results I do recommend whole milk but in a pinch you can use 1% or 2% just don’t use skim milk.
What Ingredients go into Easy Cauliflower Soup?
- Fresh cauliflower
- Yellow onion
- Carrots
- Celery
- Butter
- Low-sodium chicken broth
- Salt and pepper
- Flour
- Milk
- Sharp cheddar
- Bacon and green onions (optional)
How to Make Cauliflower Soup
- Melt 1 Tbsp butter in a large pot over medium-high heat. Add onion, carrots and celery and saute 5 minutes.
- Add chicken broth and cauliflower, season with salt and pepper to taste and bring to a boil.
- Reduce heat to medium-low then cover and simmer until veggies are tender, about 15 minutes.
- Meanwhile melt remaining butter in a medium saucepan over medium heat.
- Add flour and cook and whisk constantly 1 minute.
- While whisking slowly pour milk in flour mixture.
- Bring just to a light boil stirring constantly, remove from heat and stir in cheese.
- Once veggies are tender pour milk mixture into soup.
- Serve warm topping each serving with bacon, green onions and more cheese if desired.
Do I Have to Add Cheese?
I think the soup is more one dimensional without the cheese. The cheese does add a nice boost of flavor but this soup can be made without the cheese if you’d prefer.

Creamy Cauliflower Soup
Such a delicious soup made with lots of cauliflower and veggies. It tastes like potato soup and it's perfectly hearty and creamy. Makes about 8.5 cups.

Ingredients
- 1 (2 1/4 lb) large head cauliflower, large stem removed and discarded, remaining chopped into small pieces
- 1 small yellow onion, diced (1 cup)
- 2 carrots, peeled and diced (1 cup)
- 2 stalks celery, diced (3/4 cup)
- 5 Tbsp butter, divided
- 3 cups low-sodium chicken broth
- Salt and freshly ground pepper, to taste
- 4 1/2 Tbsp all-purpose flour
- 2 cups whole milk
- 1 cup shredded sharp white or yellow cheddar, plus more for serving if desired
- 4 - 6 slices bacon, cooked and chopped (optional)
- 2 green onions, chopped (optional)
Instructions

Do you use an immersion blender to blend the soup to make it creamy?

I didn’t but you could for a smoother soup.

Once the cauliflower was cooked and tender I used a wooden spoon and just chopped it in the soup pot – it becomes creamy once the milk mixture is added. Simply delicious!

This was so easy and yummy! Instead of the roux and cheese I sprinkled potato flakes directly into the pureed liquids as a thickener and about 1 cup of heavy cream for richness. Best Cream of Cauliflower I ever had!

I cut the cauliflower in 1/2 , blanched the other 1/2 of the cauliflower and froze it. Half a head was more than enough. Then I followed the recipe exactly and it was perfect. That was last week. Making it again today. So good.

Can the soup be frozen?

It may not thaw very smoothly because of the milk and cheese but other than that it would freeze ok.

Will the cheese mixture harden in the fridge or does the soup stay creamy?

Really enjoyed it. Easy to make. Instead of bacon I put two slices of our beef jerky grinded up and it gave it a slightly smoked flavor. Best soup I’m made yet and it was the perfect day for it since we’re snowed in.
